Amazing EGG like Vegan egg substitute
Just like eggs
- 1/2 C dry split mung beans
- Soak over night
- Rinse and drain
- Blender/puree with
- 1 C plain soymilk (only soybeans and water on label)
- 2 T oil
- 2 T nutritional yeast
- 1 t baking powder
- 3/4 t Black Himalayn salt! Kala namak (gives it a true eggy flavor)
- 1/4 t onion powder
- 1/8 t turmeric (optional for more color)
- Some like to add a little garlic powder and/or paprika (I prefer without)
This recipe is great for scrambled eggs, or a quiche...
Add whatever you like with it... Mushrooms, onions, bacos, vegan sausage, peppers,..
