Amazing EGG like Vegan egg substitute

Just like eggs
  • 1/2 C dry split mung beans
  • Soak over night
  • Rinse and drain
  • Blender/puree with
  • 1 C plain soymilk (only soybeans and water on label)
  • 2 T oil
  • 2 T nutritional yeast
  • 1 t baking powder
  • 3/4 t Black Himalayn salt! Kala namak (gives it a true eggy flavor)
  • 1/4 t onion powder
  • 1/8 t turmeric (optional for more color)
  • Some like to add a little garlic powder and/or paprika (I prefer without)
This recipe is great for scrambled eggs, or a quiche...

Add whatever you like with it... Mushrooms, onions, bacos, vegan sausage, peppers,..
