Sundried tomatoes zucchini and pinenuts
Cook 1 # Pasta (Small shape, such as bow ties, shells, spirals...)
adding: 1 zucchini cut in small sticks last 2 min
While pasta is cooking:
Toast in little olive oil:
½ c pinenuts or lightly chopped walnuts/cashews
Remove
Saute:
6 garlic
Add heating through:
½ c olive oil (Can substitute tomatoes oil for part)
½ c sundried tomatoes in oil
¾ c nutritional yeast
1 t salt
½ t pepper
Toss with pasta
 
TIPS
Mushrooms and broccoli go well with this too!
Easy and elegant!
