Marinated Tofu Appetizer
Mix the following in a pan. Bring to a boil, then simmer 2 minutes
- ½ C water
- 1 t oregano
- 1 garlic
- ¼ c olive oil
- ¼ C sherry vinegar
- ¼ c red wine
- ¼ C soysauce
- ¼ t salt
Remove from heat and add 16oz firm tofu, pressed and cut into small cubes.
Let marinate overnight in the refrigerator
Tips and ideas:
- Chill well!
- You can use any bottled or prepared Italian Style dressing instead.
- Add other vegis, cherry tomatoes, black olives, blanched broccoli or cauliflower, sliced cucumbers, etc...
- Serve as appetizer or side salad/relish in bowl or you can serve on skewers or toothpicks for a very pretty appetizer.
