Cajun and Creole dry Spice mixes

Cajun Spice mix
½ c + 1 T paprika
2 T cayenne
2 T pepper
1 T oregano
1 T thyme
1 T onion powder
1 ½ t celery seed
¾ t garlic powder
1 ½ T salt
1 t basil
Creole seasoning
26 oz salt
1 ½ oz pepper
2 oz red pepper
1 oz garlic powder
1 oz chili powder
1 oz msg/accent
1 oz thyme
1 oz basil
bay leaves
Emerils creole seasoning
2 ½ T paprika
2 t salt
2 T garlic powder
1 T pepper
1 T onion powder
1 T cayenne
1 T oregano
1 T thyme

Cajun Spice mix 2
1 T chili powder
2 t paprika
1 t thyme
½ t cayenne
½ t garlic salt
¼ t cumin
¼ t salt
Blackend Seasoning
2 T paprika
2 t onion powder
2 t garlicpowder
¾ t coriander
3/4 t salt
¼ t cayenne pepper
½ t black pepper
pinch of brown suger

Creole 2
1 c kosher salt
4 t pepper
5 garlic
1 t mace
1 t nutmeg
½ t cloves
½ t parsley
½ t celery salt
Salt free Cajun spice mix
1 t white pepper
1 t garlic powder
1 t red pepper
1 t paprika
1 t pepper
SALT FREE Cajun Spice mix 2
2 T onion powder
2 T garlic powder
2 T dried oregano leaves
2 T dried sweet basil
1 Tdried thyme leaves
1 T black pepper
1 T white pepper
1 T cayenne pepper
1 T celery seed
5 T sweet paprika
 
Creole 3
2 T + 11/2 t paprika
2 T garlic powder
1 T salt
1 T onion p
1 T oregano
1 T thyme
1 T cayenne
1 T pepper


Tips
Fresh whole seeds and herbs are best.
Heat in a dry skillet to increase flavor then grind or mortar and pestle.
Adjust for personal taste of course.
