- No egg Real Mayonnaise
- Ingredients:
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon fresh lemon juice
- 1 cup oil
- Using a food processor or
- good hand blender or mixer, mix:
- Mustard, salt, pepper, and 2 Tablespoons oil.
- Keeping the blender on high, add lemon juice and in a very slow stream, the rest of the oil.
- This should all at once get thick and turn white.
- Immediatly, turn off blender.
Tips:
- In Baking, when a recipe calls for Mayonnaise, this is what you want to use, basically oil...
- This recipe can be frustrating to make where as, in emulsifying, sometimes it works,
- sometimes it doesn't. Just try again, pour oil really slowly...
- Use mistakes in other recipes,
- like a salad dressing.
- You can also use this as a bread spread or in salads like coleslaw,
- (Although I prefer a "mayonnaise" / bread spread similar to Miracle whip, that has more tangy sweet flavor, for salads and sandwiches.)
