Basic Polenta
- Mix 1 c water with
- ¾ c course ground cornmeal.
- Add 2 c boiling water
- Dash salt,
- Boil then simmer for 30 minutes until thickened.
- Stir in 1 T vegan margarine.
- Serve as is with spoon OR
- Pour into greased pan.
- Cover and Set in refridgerator until firm. (or overnight)
- Slice in wedges
- Heat as desired
- or Fry
- Serve with maple syrup or other toppings. Sausage and gravy works too!
- Can dip in cornmeal before frying, to add a little texture,
Basic Sweet Polenta AKA Cornmeal mush porridge
- 4 c almond milk
- 2 T sugar
- Vanilla
- 2 c water
- Bring to a Boil; add:
- 3/4 c cornmeal
- Simmer/stirring
- 35-40 min
- Top with butter, and serve with any pancake toppings
