Homemade Breakfast Polenta

Basic Polenta
  • Mix 1 c water with
  • ¾ c course ground cornmeal.
  • Add 2 c boiling water
  • Dash salt,
  • Boil then simmer for 30 minutes until thickened.
  • Stir in 1 T vegan margarine.
  • Serve as is with spoon OR
  • Pour into greased pan.
  • Cover and Set in refridgerator until firm. (or overnight)
  • Slice in wedges
  • Heat as desired
  • or Fry
  • Serve with maple syrup or other toppings. Sausage and gravy works too!
  • Can dip in cornmeal before frying, to add a little texture,
Basic Sweet Polenta AKA Cornmeal mush porridge
  • 4 c almond milk
  • 2 T sugar
  • Vanilla
  • 2 c water
  • Bring to a Boil; add:
  • 3/4 c cornmeal
  • Simmer/stirring
  • 35-40 min
  • Top with butter, and serve with any pancake toppings
