Vegan Pancake and waffle Recipes

Always let pancake batter sit for around 10 minutes before cooking, if possible

Favorite Fat n fluffy Whole wheat vegan pancakes
  • Makes 8 small pancakes. (Enough for 2, usually)
  • Mix
  • 1 C Soy milk or almond milk or other.
  • 2 t plain vinegar
  • 2 T oil
  • 1 T ground flax
  • 2 T brown sugar
  • 1 t vanilla
  • Mix
  • 1 C whole wheat flour
  • 2 t baking powder
  • 1/4 t salt
  • Let sit 5 minutes if possible
  • Gently blend wet and dry
  • Let sit 10-30 minutes if possible
  • Cook on hot griddle with oil

  • Basic Vegan Waffles or pancakes
    • Combine: Wet then dry, then together gently
    • 2 C soymilk
    • 2 t vinegar
    • 3 T oil
    • 2 T sugar
    • 1 t vanilla
    • 2 1/2 C white flour
    • 1 T baking powder
    • 2 T ground flax
    • 1/4 t salt
    • Let batter sit 5 minutes before frying
    • Cook in waffle iron or on griddle...
    • Serve with vegan margarine and real maple syrup,
    • berries, applesauce, chocolate syrup...
    • or other toppings of choice.

    • Mix:
    • 1/2 c flour
    • 1/2 c ww flour
    • 1/2 C blendered oats
    • 1/3 C b sugar
    • 1/2 t bs
    • 1 t bp
    • 1/2 t salt
    • Mix:
    • 1 1/3 C soymilk
    • 3 T oil
    • 2 t vinegar or lemon juice
    • 1 T ground flax
    • blend all and fry
    • Oat pancakes
    • Mix:
    • 1 C flour
    • 1/2 C oats
    • 1 T bp
    • 1/2 t salt
    • Mix:
    • 1 C soy milk
    • 1 t vinegar
    • 2 T oil
    • 2 t ground flax
    • blend together and fry.

    Favorite Buckwheat Pancakes
    • Mix
    • 1 c soymilk
    • 1 t vinegar
    • 1 T oil
    • 1 T ground flax
    • 2 T brown sugar
    • Let sit 5 minutes if possible
    • Mix dry ingredients
    • 1/2 C buckwheat flour
    • 1/2 C white flour
    • 1 t baking powder
    • 1/2 t baking soda
    • 1/4 t salt
    • Gently Mix all together
    • Let sit 10- minutes if possible
    • Cook as normal

    Ginger buckwheat Pancakes/waffles
    • 2 C buckwheat flour
    • ¾ C water or soymilk
    • ¼ C oil
    • 1 T molasses
    • 2 t +- ginger powder
    • 4 t baking powder
    • ¼ t salt

    Whole wheat gingerbread pancakes
    • Mix:
    • C ww flour
    • 1 1/2 t bs
    • 1 1/2 t ginger
    • 1 1/2 t cinnamon
    • 1/2 t salt
    • 1/4 t cloves
    • Mix:
    • 12 oz froz/thawed apple juice concentrate
    • 1/2 c water
    • 1/4 c melted butter
    • 1/4 c oil in
    • 2 T ground flax
    • Blend together and fry as normal

    Overnight Belgium buckwheat pancakes
    • 1 C water with
    • 1 1/2 t yeast
    • 10 min
    • Add:
    • 1 1/4 c soy milk
    • 1 1/2 c buckwheat flour
    • 1/2 c whole wheat flour
    • Mix, cover, and set in fridge overnight
    • Stir in
    • 1 T molasses
    • 1/2 t salt
    • 1/2 t bs
    • Fry as normal

    Multi grain pancakes
    • Mix wet, and dry, then all together
    • 1/2 c whole wheat flour
    • 1/4 C white flour
    • 1/4 C rye
    • 1/4 c buckwheat
    • 1/4 c cornmeal
    • 1/2 t salt
    • 1 T bp
    • 1 1/3 c soymilk
    • 1 T oil
    • 2 T ground flax
    • 2 T sugar
    • Let sit 10- 30 minutes if possible before frying


    Apple pancakes
    • Mix:
    • 1 1/2 c ww pastry flour
    • 1/4 t salt
    • 1 T bp
    • Add:
    • Mixed:
    • 2 T frozen apple juice concentrate
    • 3/4 c soymilk
    • 2 t lemon juice
    • 2 apples grated
    • Blend and fry
    • Serve with syrup or applesauce

    Double chocolate pancakes

    • 1 C flour
    • 1 T sugar
    • 2 t bp
    • 1/4 t salt
    • 2 T oil
    • 2 t ground flax
    • 1 C chocolate milk
    • 1 t vanilla
    • Fry one side, flip and top with chips (1/4 c total)
    • or
    • 1 1/2 C flour
    • 1/4 C cocoa
    • 3 T sugar
    • 1 T bp
    • 1/2 t salt
    • 1 1/4 C soymilk
    • 3 T melted margarine
    • Fry flip add chocolate chips

    Fancy apple ring pancakes
    • Core and Slice apple into rings
    • dip into Pancake batter
    • Fry as normal
    • Sprinkle with Chopped pecans before frying is good too

    To make Belgium Pancakes/waffles
    • Just Substitute
    • Mixed
    • 1 pkg yeast
    • 2 C soymilk
    • for = milk in other recipes
    • and eliminate Baking powder
    • Mix all and let batter sit 1 hour before cooking

    Take any pancake recipe and put it in a waffle iron to make homemade waffles

    • Make regular pancakes healthier
    • In place of partial white flour
    • Buckwheat flour
    • Whole wheat flour
    • Ground oats

    TIPS
    • When cooking for guests I make a big batch of the basic recipe for pancakes
    • and have bowls of optional ingredients next to it.... Ask the guests what they want
    • and sprinkle it on after you ladle onto the griddle, or mix gently in a bowl before ladling.
