Homemade Waffles or Pancakes

Cholesterol Free Vegan Recipe
Vegan Waffles or pancakes
21/2 C flour
2 C soymilk
3 T oil
1 T baking powder
2 T maple syrup (optional)
2 T ground flax (optional)
2 T sugar
1/4 t salt
1 t vanilla
Stir well

Let batter sit 5 minutes before frying

Change ingredients to your preference.
Cook in waffle iron or on griddle...
Serve with vegan margarine and real maple syrup,
berries, applesauce, chocolate syrup...
or other toppings of choice.

When cooking for guests I make a big batch of the basic recipe for pancakes
and have bowls of optional ingredients next to it.... Ask the guests what they want
and sprinkle it on after you ladle onto the griddle, or mix gently in a bowl before ladling.
Change recipe using any of the following ingredients, or ??
In place of partial flour

Buckwheat flour
Whole wheat flour
Ground oats

Optional Ingredients
Mashed banana
Ground nuts
1 t cinnamon
1/2 t nutmeg
chopped apples
chocolate chips
sunflower seeds
poppy seeds
Pumpkin, ginger, molasses
lemon peel
poppy seeds
what else????

Belgium Pancakes/waffles

Substitute Mixed

1 pkg yeast

2 C soymilk

for = milk in other recipes

and eliminate Baking powder

Mix all and let batter sit 1 hour before cooking

Substitute part whole wheat flour, ground oats, and/or cornmeal for flour.

Gingerwheat Pancakes/waffles
2 C buckwheat flour
¾ C water
¼ C oil
1 T molasses
2 t +- ginger powder
4 t baking powder
¼ t salt

Pumpkin Pancakes/waffles
Mix: 12 oz melted/cooled vegan margarine
½ C siken tofu
16 oz can pumpkin
2 ½ C soymilk (only soybeans and water on label
1/3 C brown sugar
3 T oil
1 T vinegar
3 C flour
5 t baking powder
2 T cornstarch
½ t each baking soda, nutmeg, ginger
1/8 t salt

Waffle sandwich
Premade waffles
Spread with toppings of choice and fold.
Peanut butter
Maple syrup or Agave mixed with vegan margarine
chocolate chips
