Traditional Black Eyed Peas

  • 1 # dried black eyed peas cover with water and soak overnight
  • Drain.
  • Add 4 C boiling water
  • 1 t salt
  • 2 T sugar
  • 2 T oil, (optional)
  • ½ cup bacos, or vegan bacon bits (optional)
  • Bring to a boil then simmer 2 hours until tender
