Homemade Spanish rice:
Saute:
- 2 T oil
- ¼ C onion
- ¼ c bell pepper
Mix w/
- 3 c cooked rice
- 2 C diced Tomatoes in sauce
- 1 ½ t salt
- 1/2 t pepper
- ¼ C or more Bacos
- 1 t liquid smoke (optional)
Top w/
- ¼ C vegan cheese if desired
- Bake 400 25-30 min
Tips/Options:
You can make a really great simplified version by just taking cooked rice, and mix in ready made salsa, add some bacos if you like. Heat and eat! Or put it in a casserole dish, top with vegan cheese and Bake 400 25-30 min.
