Preserved lemons

  • Mix:
  • 1 C kosher salt or 2 C crystal
  • 1/2 C sugar
  • Pack in 1 qt glass jar between
  • 5 clean lemons cut in 1/4 lengthwise.
  • Cover and fridge at least 1 month before using.
  • Shake every day for 1st 2 weeks
  • Lasts a year in the fridge

  • Preserved lemon dressing
  • Process smooth:
  • 1 preserved lemon
  • 1 T light miso
  • 1/4 C olive oil
  • 3 t agave
  • 2 T fresh lemon juice
