Preserved lemons
- Mix:
- 1 C kosher salt or 2 C crystal
- 1/2 C sugar
- Pack in 1 qt glass jar between
- 5 clean lemons cut in 1/4 lengthwise.
- Cover and fridge at least 1 month before using.
- Shake every day for 1st 2 weeks
- Lasts a year in the fridge

- Preserved lemon dressing
- Process smooth:
- 1 preserved lemon
- 1 T light miso
- 1/4 C olive oil
- 3 t agave
- 2 T fresh lemon juice
