Easy Curried Chickpeas

  • Saute
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tsp. olive oil
  • ADD
  • 2-3 T mild curry paste
  • 2 cans diced tomatoes
  • 2 cans chickpeas
  • 2 t soy sauce
  • 2 T lemon juice
  • 1/2 tsp. salt
  • Bring all to a boil. then Simmer 30 to 40 minutes on low heat.
