Easy Curried Chickpeas
- Saute
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tsp. olive oil
- ADD
- 2-3 T mild curry paste
- 2 cans diced tomatoes
- 2 cans chickpeas
- 2 t soy sauce
- 2 T lemon juice
- 1/2 tsp. salt
- Bring all to a boil. then Simmer 30 to 40 minutes on low heat.

Tips and ideas:
Serve with brown rice.
