Curried Spinach and Potatoes
- In a large fry pan heat oil. Add mustard and cumin seeds and fry (with lid on) until the seeds pop. Add remaining spices and chillies.
- 2 Tbsp. oil
- 1 tsp. black mustard seeds
- 1 tsp. cumin seeds
- 1/2 tsp. ground tumeric
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cumin
- 2 fresh green chillies (chopped)
- Add
- 1 lb. potatoes cubed
- stirfry a few minutes.
- Add 1 t salt
- 1/2 cup water
- Cook 10 minutes.
- Add
- 2 pkgs. frozen spinach (thaw and drained) or 1 # fresh drained spinach (squeeze to remove all water).
- Cook 10 minutes longer.
- Add
- 1/2 tsp. nutmeg
- Adjust seasonings to taste

Tips and ideas:
- Serve with rice and or flatbread.
- Add chopped tomato for garnish
