Curried Spinach and Potatoes

  • In a large fry pan heat oil. Add mustard and cumin seeds and fry (with lid on) until the seeds pop. Add remaining spices and chillies.
  • 2 Tbsp. oil
  • 1 tsp. black mustard seeds
  • 1 tsp. cumin seeds
  • 1/2 tsp. ground tumeric
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cumin
  • 2 fresh green chillies (chopped)
  • Add
  • 1 lb. potatoes cubed
  • stirfry a few minutes.
  • Add 1 t salt
  • 1/2 cup water
  • Cook 10 minutes.
  • Add
  • 2 pkgs. frozen spinach (thaw and drained) or 1 # fresh drained spinach (squeeze to remove all water).
  • Cook 10 minutes longer.
  • Add
  • 1/2 tsp. nutmeg
  • Adjust seasonings to taste

Tips and ideas:

  • Serve with rice and or flatbread.
  • Add chopped tomato for garnish
