Curried Spinach and Potatoes

Curried Spinach and Potatoes
2 Tbsp. oil
1 tsp. black mustard seeds
1 tsp. cumin seeds
1/2 tsp. ground tumeric
1/2 tsp. ground coriander
1/2 tsp. ground cumin
2 fresh green chillies (chopped)

1 lb. potatoes cubed

1/2 cup water
1 tsp. salt (to taste)
2 pkgs. frozen spinach (thaw and drained)
or 1 # fresh
1/2 tsp. nutmeg
In a large fry pan heat oil. Add mustard and cumin seeds and fry (with lid on) until the seeds pop. Add remaining spices and chillies.
Add potatoes and stirfry a few minutes. Add salt and 1/2 cup water. Cook 10 minutes.
Add drained spinach (squeeze to remove all water). Cook 10 minutes longer. Add nutmeg.
Serve with rice and or flatbread.

 *Add chopped tomato for garnish
