Homemade vegan Fajitas:

  • Sauté'
  • Red and green bell peppers
  • onions
  • plus basically whatever vegis you want… broccoli, zucchini, mushrooms
  • drizzle with a little Italian Salad dressing. (or lime juice, olive oil, oregano, basil)
  • Add cubed tofu or seitan if you want...
  • Spoon into a soft flour tortilla and roll up.
  • Great as is, or Serve with
  • Salsa
  • vegan cheese
  • guacamole
  • and vegan sour cream

Tips and ideas:

heat flour tortillas before filling:

  • Place a tortilla on top of the sautéing vegis for a couple minutes to heat.
  • Or splatter tortillas with a few drops of water and put in the microwave 30 seconds.
  • Or traditionally, heat over an open flame
