3 bean Salad
- Blanch 3/4 # Fresh Asparagus, 2 minutes then drench in ice water
- Mix Dressing:
- 1/2 C olive oil
- 2 T Wine Vinegar
- 1 t basil
- 1 T parsley
- 2 cloves minced garlic
- 2 T scallions
- 1/2 t each salt and pepper
- Pour over blanched asparagus and chill several hours.
