Vegan Sweet crunchy Bok Choy Salad
- Vegan Bok Choy Salad
- 1 head bok choy or regular cabbage chopped.
- 3 green onions (optional)
- 1 carrot, shredded
- Toss with:
- Dressing:
- 1 c oil
- ½ c sugar
- ¼ c vinegar
- 2 T soy sauce
- 1 T sesame oil

- Crunchy topping:
- Melt:¼ c vegan margarine
- Add:
- 2 T sugar
- 2 pkg. ramin noodles
- crushed
- 2 T sesame seeds
- 3 oz sliced almonds
- Stir fry until lightly browned.
- (Add the nuts and seeds toward the end since they brown fastest!)
Tips:
The topping and dressing is great on regular lettuce too!
This recipe makes extra dressing and topping so
only use enough of the dressing and crunchy topping that you need.
