Cabbage Salad
Cholesterol Free Vegan Recipe

 Traditional Coleslaw

½ Cabbage Shredded fine
½ t Salt
1/2 t Pepper
1/4 C Sugar
½ c Vegan Mayonaise.
2 T Soymilk
1 t Vinegar
2 Carrots grated

Combine all. Adjust for taste.
and chill for several hours or overnight.

May reduce sugar a little if using a sweeter mayonaise/salad dressing.

To vary salad or extend::add optional ingredients: Chopped apples, pineapple, nuts, raisins, coconut....
Crunchy coleslaw

½ head cabbage chopped
1 onion chopped fine
1 carrot grated or chopped fine
½ bell pepper chopped fine
sprinkle with:
2 T sugar
Heat until melted:
1/4 C oil
1 T sugar
1 t salt
1 t dry mustard

Toss with warm dressing
then chill for several hours or overnight.

Overnight Slaw for a crowd serves 12+
In Sauce pan:
½ C white wine vinegar
½ c oil
½ c sugar
2 t Dijon mustard
1 t salt, celery seed, and mustard seed
Boil 1 minute
Pour over and toss:
1 head cabbage (8 c shredded)
1 red onion sliced thin rings
½ c chopped red pepper
½ C chopped green pepper
½ C sliced stuffed olives
Fridge overnight. Toss again before serving.

Cumin lime slaw
3 carrots
1 small cabbage
1 bell pepper
1 onion
¾ C cilantro
Mix dressing then toss together
1/3 C lime juice
½ t cumin
1 garlic
½ C olive oil

Cabbage apple slaw
1 apple diced sprinkle with
1 T lemon juice
Toss together
1 C shredded carrot
3 C shredded cabbage

Mix then toss over above:
2 T lemon juice
3 T oil
1 t salt
¼ t cumin
2 T mint or parsley

Sprinkle over the top
2 T sunflower seeds

Simple Carrot pineapple slaw
2 C grated carrots
2 C chredded cabbage

Mix then toss together.
¾ C pineapple juice
¾ t cinnamon
1/8 t nutmeg



Use part green cabbage and part purple cabbage shredded in differnet sizes for prettier results.


Keeps for several days in fridge.
