Traditional Cole slaw

Homemade Mayonnaise/bread spread, with a sweet tangy zip!
Traditional Cole Slaw
- ½ Cabbage Shredded fine
- ½ t Salt
- 1/2 t Pepper
- 1/4 C Sugar
- ½ c Vegan Mayonaise.
- 2 T Soymilk
- 1 t Vinegar
- 2 Carrots grated
- Combine all. Adjust for taste.
- and chill for several hours or overnight.
Overnight Slaw for a crowd serves 12+
- In Sauce pan, heat:
- ½ C white wine vinegar
- ½ c oil
- ½ c sugar
- 2 t Dijon mustard
- 1 t salt, celery seed, and mustard seed
- Boil 1 minute
- Pour over and toss:
- 1 head cabbage (8 c shredded)
- 1 red onion sliced thin rings
- ½ c chopped red pepper
- ½ C chopped green pepper
- ½ C sliced stuffed olives
- Fridge overnight. Toss again before serving.
Crunchy coleslaw
- Mix;
- ½ head cabbage chopped
- 1 onion chopped fine
- 1 carrot grated or chopped fine
- ½ bell pepper chopped fine
- sprinkle with:
- 2 T sugar
- Dressing
- Heat until melted:
- 1/4 C oil
- 1 T sugar
- 1 t salt
- 1 t dry mustard
- Toss with warm dressing
- then chill for several hours or overnight.
Cumin lime slaw
- Shred:
- 3 carrots
- 1 small cabbage
- 1 bell pepper
- 1 onion
- ¾ C cilantro
- Mix dressing then toss together
- 1/3 C lime juice
- ½ t cumin
- 1 garlic
- ½ C olive oil
