Favorite Gazpacho salad or cold soup
- Mix then chill
- 1/4 c olive oil
- 2 T lemon juice
- 2 C tomato juice or V8
- 1/4 C chopped onion
- 2 tomatoes, chopped
- 2/3 C cucumber, chopped
- 2 cloves garlic
- salt and papper to taste
- 1/2 t marjorum OR oregano
- dash tabasco or hot sauce, optional
Tips:
Chill well.
Keep chunky or Blender / process lightly if you want a smoother base.
Serve in fancy glasses for guests
