- 5 potatoes
cooked, diced. (Sub a purple potato and orange sweet potato for great color and more nutrition!
1 1/4 c vegan
mayonaise
- s & p to
taste
- 2 T ch
onion
- 2 T
pimento
- 1/4 c
celery
- 1 Cup diced
extra firm tofu
(Optional: sprinkle tofu with 1/2 t
turmeric and 2 t Nutritional
yeast, 1/2 t black salt.)
- Sprinkle all
with paprika
