Moms Potato Salad
- Mix gently:
- 5 potatoes cooked, diced. (Sub a purple potato and orange sweet potato for great color and more nutrition!
- 1 1/4 c vegan mayonaise
- s & p to taste
- 2 T ch onion
- 2 T pimento
- 1/4 c celery
- 1 Cup diced extra firm tofu
- sprinkle tofu with 1/2 t black salt. (Kala namak for a real eggy flavor)
- Sprinkle all with paprika
