Moms Potato Salad

Moms VEGAN Potato Salad
 
Mix gently:
5 potatoes cooked, diced. (Sub a purple potato and orange sweet potato for great color and more nutrition!
1 1/4 c vegan
mayonaise
s & p to taste
2 T ch onion
2 T pimento
1/4 c celery
1 Cup diced extra firm tofu
(Optional: sprinkle tofu with 1/2 t turmeric and 2 t Nutritional yeast, 1/2 t black salt.)
Sprinkle all with paprika

 

TIPS
Try it with some sweet pickle relish mixed in.
or add some dill for a different flavor.
