Traditional Seven layer salad
- Layer, in glass dish if possible
- 1/2 Pound fresh spinach
- ½ c celery
- ½ c onion
- ½ c bell pepper
- 1 c fresh cooked peas
- Top with:
- 1 c mayo
- sprinkle with 2 T sugar
- 2 T Nutritional yeast or vegan parmesan
- 1/4 c Bacos
7 Layer dilly macaroni salad
- Layer or mix together:
- 1 C small macaroni shells. Cook as directed cool.
- 4 C romaine lettuce
- 4 C small carrot sticks or shreds
- 1 pkg frozen peas thawed/cooked/cooled
- 1 small red onion slice in small rings
- 1 can garbonzos or fake ham, or small cubes of extra firm tofu.
- Mix 1 ½ C mayo with 2 T fresh dill
- If layered, mound mayo on top.
- chill before serving
7 layer salad with sour cream
- Layer:
- 1 head lettuce
- 2 C celery
- 1 red onion
- 1 can water chestnuts
- ½ box frozen peas cooked chilled
- Spread Dressing on top:
- 8 oz vegan sour cream
- 1/3 c sugar
- ½ c mayo
- 2 T vinegar
- Top with
- Bacos
- 1/2 small box, Extra firm Tofu in small cubes
Marinated mushroom pasta salad
- Prepare 8 oz pasta Such as Rotelli, mosaccioli, or
- 1 8oz jar marinated mushrooms
- (use juice in dressing)
- Blanch:1 ½ C thin sliced carrots and
- 2 C sliced broccoli about 2 minutes.
- ½ bell pepper
- ½ C olives
- 1 small onion, chopped
- Mix pasta and vegis, and toss with
- Oil and vinegar or Italian dressing.
