Chickun teriyaki salad

  • Prepare/Fry chicken sub of choice.
  • Slice into 1 inch pieces
  • or use pressed extra firm tofu, and fry in oil , all sides, til golden and crispy.
  • Set aside
Saute:
  • 2 T oil
  • ¼ C green onions
  • 1 T parsley
  • 1 T ginger
  • 1 T chopped garlic
  • 1 t cr. Red pepper
  • 3 ribs celery sliced diagonal
  • 2 carrots sliced diagonal
  • 1 C water chestnuts sliced
  • 1 head broccoli
  • ½ C fresh mushrooms
  • Cook 3 minutes til crisp tender
Mix
  • 1 T cornstarch with
  • ¾ c prepared teriyaki sauce
Home made Teriyaki Sauce
  • Add to vegis
Split 8 Cups Lettuce in 4 bowls.
  • Split vegis on that
  • Chickun on top
Drizzle with 1/4 c Dressing on each:
  • 1 C red wine vinegar
  • 2 T cider vinegar
  • 1 T brown sugar
  • 1/8 t cayenne pepper
  • 1/8 t ginger
  • 1/8 t salt
  • 1 T soy sauce
  • 3 T oil
