Chickun teriyaki salad
- Prepare/Fry chicken sub of choice.
- Slice into 1 inch pieces
- or use pressed extra firm tofu, and fry in oil , all sides, til golden and crispy.
- Set aside
Saute:
- 2 T oil
- ¼ C green onions
- 1 T parsley
- 1 T ginger
- 1 T chopped garlic
- 1 t cr. Red pepper
- 3 ribs celery sliced diagonal
- 2 carrots sliced diagonal
- 1 C water chestnuts sliced
- 1 head broccoli
- ½ C fresh mushrooms
- Cook 3 minutes til crisp tender
Mix
- 1 T cornstarch with
- ¾ c prepared teriyaki sauce
Home made Teriyaki Sauce
Split 8 Cups Lettuce in 4 bowls.
- Split vegis on that
- Chickun on top
Drizzle with 1/4 c Dressing on each:
- 1 C red wine vinegar
- 2 T cider vinegar
- 1 T brown sugar
- 1/8 t cayenne pepper
- 1/8 t ginger
- 1/8 t salt
- 1 T soy sauce
- 3 T oil
