My
version of the Tofu Soy Salad at
Safeway
Mix:
2 T canola oil
2 T sesame oil
1 C Soy Sauce (Tamari, Shoyu)
2/3 C rice vinegar
1/2 C sugar
Serve over:
Fresh beans sprouts
Water Cress
chopped tomatoes
Minced green onion
Chopped cucumbers
Cubed extra firm tofu
Optional: Add a little ginger, and
sesame seeds....
Serve Very cold.
I like to use more lettuce, instead of
just the little watercress, which
Safeway does.
I also like chopped cucumber, and a
little grated carrot.
