Traditional
Tabbouleh (Cracked wheat salad)
Pour boiling water over 2 C cracked
wheat and let sit 1-2 hours
- Drain and
squeeze well
- Mix with:
1 ½ C chopped green
onions
- 2 t
salt
- 1 t
pepper
- 2 C
parsley
- ¾ C cherry
tomatoes
- 1 C olive
oil
- 1 C lemon
juice
1/4 C mint leaves
Chill well, overnight is
best.
- Serve on lettuce
leaves.
