Traditional Tabbouleh (Cracked wheat salad)

  • Pour boiling water over 2 C cracked wheat and let sit 1-2 hours
  • Drain and squeeze well
  • Mix with:
  • 1 ½ C chopped green onions
  • 2 t salt
  • 1 t pepper
  • 2 C parsley
  • ¾ C cherry tomatoes
  • 1 C olive oil
  • 1 C lemon juice
  • 1/4 C mint leaves
  • Chill well, overnight is best.
  • Serve on lettuce leaves.
