Eggplant sandwich
Slice 1 large
eggplant into thin pieces (do not
peel)
Salt and let
sit 30 minutes on paper
towels
Rinse
Coating
Mix:
1/2 c
flour
1 c bread
crumbs
1/4 t
basil
1/4 t
oregano
1/4 c
nutritional yeast
Dip eggplant in
coating.
Fry or
Broil a couple minutes
Serve on
good quality bread or
bun.
Top with
pesto and/or red pepper spread, or
vegan aioli ....
