Vegan Eggplant sandwich recipe
Openface Eggplant sandwich
- Slice 1 large eggplant into thin pieces (do not peel)
- Salt and let sit 30 minutes on paper towels
- Rinse
- MIX: Coating
- 1/2 c flour
- 1 c bread crumbs
- 1/4 c nutritional yeast
- 1 t garlic salt
- 1/4 t basil
- 1/4 t oregano
- Dip eggplant in liquid from garbonzo beans (optional)
- Then Dip eggplant in coating.
- Fry or Broil a couple minutes
- Serve as is, or on good quality bread or bun.
- Top with pesto and/or red pepper spread, or vegan aioli ....
Eggplant sandwich with caramelized onions
- Sprinkle sliced eggplant with salt 30 min/Rinse and pat dry
- Saute slow and low
- 2 T oil
- 1 onion sliced thin
- 20 min
- Add
- 1 red bell pepper diced
- 1 cl garlic
- 10 min
- Add:
- 2 T balsamic
- 5 min
- s&p
- Broil eggplant 3 min side
- put onto Ciabatta rolls with sauteed vegis, lettuce, tomatoes
