Homemade Grilled Portabello Mushroom Burger

VEGAN Grilled Mushroom Burger

  • Grill Portabello about 5 minutes a side
  • Spread bun with vegan Aioli Spread (recipe below)
  • (or mayo mixed with a little garlic and lemon juice)
  • Place grilled mushroom on bun.
  • Drizzle with reduced balsamic vinegar (below) or just balsamic vinegar
  • Grilled onions good on it too...

  • Vegan Aioli Spread
  • 1/4 C olive oil
  • 1 clove garlic
  • 1/4 C vegan mayo
  • 2 t lemon juice
  • 1/2 t dijan mustard
  • 1/2 t rosemary
  • 1/8 t pepper

  • Reduced Balsamic
  • 1 C balsamic vinegar
  • 2 t sugar
  • 2 T water
  • Boil then simmer 25 minutes
  • Should have around 1/3 C

You can also marinate portabellos (or tofu steaks) 30 minutes + -, in any sauce.

My favorite is

  • Teriyaki Sauce
  • or drizzle with a little balsamic vinegar before grilling

    And make into a sandwich
