VEGAN Grilled Mushroom Burger
- Grill Portabello about 5 minutes a side
- Spread bun with vegan Aioli Spread (recipe below)
- (or mayo mixed with a little garlic and lemon juice)
- Place grilled mushroom on bun.
- Drizzle with reduced balsamic vinegar (below) or just balsamic vinegar
- Grilled onions good on it too...
- Vegan Aioli Spread
- 1/4 C olive oil
- 1 clove garlic
- 1/4 C vegan mayo
- 2 t lemon juice
- 1/2 t dijan mustard
- 1/2 t rosemary
- 1/8 t pepper
- Reduced Balsamic
- 1 C balsamic vinegar
- 2 t sugar
- 2 T water
- Boil then simmer 25 minutes
- Should have around 1/3 C
You can also marinate portabellos (or tofu steaks) 30 minutes + -, in any sauce.
