- Lentil
Burgers
- Saute'
1 small onion,
chopped
- 4 T vegan
margarine (or oil)
Mix in.:
Cooked lentils (About 3
cups)
- 1 t dry
mustard
- 1 T vegan
Worcestershire
- 1/2 pkg
saltines
- 1 T lemon
juice
- Add: Dry
oats to thicken (about 1/2
cup)
- Scoop about a
patties worth into:
mixed:
1/2 C flour
1/2 C cornmeal
1/2 C garbonzo/chickpea flour.
(just use flour and cornmeal if you
don't have any garbonzo flour)
Form into a pattie, working flour into
burger until it stays together
well.
Fry in hot oil until lightly browned on
both sides.

To Cook
Lentils:
(Sort through to remove any
pebbles...)
Boil/Simmer 1 c lentils in 2 1/2 cups
lightly salted
water for 45 minutes.
Mash or blender smooth.
(I like to toss in some onion, garlic
and carrot while it cooks... can remove
before mashing or just keep it in. Or just
add a little broth powder to the water
while cooking)
