Muffaletta Sandwich for a crowd (8+)

Muffaletta Ingredients

Marinated Vegis
1/3 c olive oil
½ c bl olives
¼ c green olives
¼ c cauliflower
¼ c carrot
¼ c celery
2 T red wine vinegar
2 T parsley
1 T garlic
½ t oregano
¼ t pepper
2 T capers (opt)

 BIG Sandwich Bread
½ c oats
¼ c cornmeal in
½ c water
¼ c oil
2 T ground flax
1 T minced onion
1 ½ teaspoons yeast in1/4 c water
3/4 c soymilk*
1 T sugar
1 t salt
2+c flour
1 t garlic salt
t minced onion
1 T sesame seeds


Marinated Vegetables:
Mince and Marinate all overnight.
Make Bread:
Soak oats and cornmeal in water 15 minutes.
Add remaining ingredients.
Mix in enough flour for a stiff dough.
Spread onto greased pizza plate.
Brush with oil
Sprinkle with 1 t garlic salt, 1 t minced onions,
1 T sesame seeds.
Bake 350 25-30 minutes.
Cool. Slice in half.
Spread with marinated vegis.
Top w/
vegan cheese slices
vegan meats slices
slice pie like
serve w/ extra mustard/pickles/Italian dressing

*Only use Soymilk with ONLY soybeans and water on the ingredients.

Fill sandwich early and weigh down with a heavy object for a couple hours, for easier slicing.
