Open Face Sauteed Vegiwich with tofu

  • 8 1/2 ' slices french bread
  • 16 oz extra firm tofu cut into 1/2 " slices (optional)
  • vegi cheese (optional)
  • 1 onion sliced in thin rings
  • 1 c mushrooms sliced
  • 1/2 C carrot grated
  • 1/2 c celery chopped fine
  • Mix together:
  • 2 T water
  • 1 T vegan Worcestershire
  • 1/2 t cornstarch
  • Saute vegis in a little oil until done
  • Add water/cornstarch mixture.
  • Cook 1 minute
  • Dry fry or broil tofu about 3 minutes a side.
  • Place on top of bread.
  • top with vegan cheese and broil until cheese is slightly melted
  • Top with vegis and serve

Marinated Vegis on roll

  • Saute vegis of choice a couple minutes:
  • in small amount of canola oil:
  • Sliced zucchini
  • onion
  • bell peppers
  • Carrots
  • Mushrooms
  • Remove
  • Drizzle with favorite vinegrette
  • Sit overnight in fridge
  • Serve on firm roll or bread, cold or warmed
