Black and White Soup
Potato Garlic Soup
- 3 T chopped onion
- 6 T margarine or more
- 6 Cloves minced Garlic
- 3 t celery salt
- ½ t pepper
- 2 C water
- 4 C plain unsweetened soymilk (ONLY SOYBEANS AND WATER on label)
- 2 - 3 C boxed, dried mashed potatoes
- Saute onions in margarine over med. Add garlic half way through
- Add remaining ingredients through soy milk
- Heat to boiling point
- Add potatoes, stirring until thickened.
- Add water or more soy milk if too thick…
Black Bean Soup
- 1 # black beans
- 1 onion
- 4 cloves garlic
- 1 green pepper
- 1 small can tomato paste
- 1 # can tomatoes
- 1 t cumin
- 1 t oregano
- ¼ t cloves
- 1 Bay leaf
- 1 t thyme
- 2 C sherry
- 6 C water
- 3 T vegetable broth powder
- Soak beans overnight.
- Boil next morning 30 minutes.
- Add rest of ingredients
- Boil/simmer 2 hours
- Add water if neccesary
- Remove Bay leaf.
- Blender until Smooth if desired
- Ladle both soups into 1 bowl at the same time, side by side.
- Design a Yin Yang or another shape.
- Works best if soups are both at the same thickness.
- Decorate with green parsley, chive stalks, or a peppered cream sauce, red or green…
