Classic Manhatten style Red Chowder Recipe
Manhatten Red Chowder
- ΒΌ C olive oil
- 1 onion chopped
- 3 cloves chopped garlic
- 3 potatoes cubed
- 1 carrot sliced
- 2 T parsley
- 1 red bell pepper chopped
- 2 T dry mash potatoes
- 1 t thyme
- 1 t pepper
- 1 t salt
- 1 bay leaf
- 2 t oregano
- 1 t basil
- 16 oz crushed tomatoes
- 2 C tomato juice
- dash cayenne
- 1 piece kombu crumbled
- 1 Box extra firm tofu , freeze, thawed, squeeze, crumbled
- Heat all to a boil
- Simmer 1 - 2 hours
- Stir in 1 T lemon Juice
- 1 C wine
- Heat
- Season to taste
