Shitake spinach soup Recipe

Vegan Shitake spinach soup

  • Soak 8 large shitake caps in hot water 30 minutes.
  • Strain water through fine mesh adding more water to equal 7 cups
  • Chop mushrooms and add all to water:
  • 2 T broth powder (frontier or knorr, or use 2/3 onion powder, 1/3 garlic powder)
  • ½ t basil
  • ½ t garlic powder
  • 1 t lemon juice
  • Boil simmer 10 minutes
  • Add salt or soy sauce to taste.
  • Stir in 1 ½ C fresh spinach
