Shitake spinach soup Recipe
Vegan Shitake spinach soup
- Soak 8 large shitake caps in hot water 30 minutes.
- Strain water through fine mesh adding more water to equal 7 cups
- Chop mushrooms and add all to water:
- 2 T broth powder (frontier or knorr, or use 2/3 onion powder, 1/3 garlic powder)
- ½ t basil
- ½ t garlic powder
- 1 t lemon juice
- Boil simmer 10 minutes
- Add salt or soy sauce to taste.
- Stir in 1 ½ C fresh spinach
