Vegan Spinach soba noodle soup
- Spinach soba noodle soup
- Prepare 4 oz soba noodles and divide into 2 bowls
- Soak ¾ C dried shitake pieces in hot water 30 minutes
- Strain shitake water through fine mesh, add water to = 3 C.
- Saute'
- 2 T oil
- ½ C leeks (white part)
- Add mushroom water
- mushrooms
- 1 sliced carrot
- ¼ onion
- 1 T grated ginger
- 1 t sugar
- 2 T soy sauce
- ¾ C cubed extra firm tofu
- Heat through.
- Add:
- 2 C fresh spinach
- 1 t sesame oil
- Ladle over noodles.
- Sprinkle with sesame seeds
