Minnesota Wild Rice Soup

  • Saute':
  • 1/4 C vegan margarine
  • 1 T minced onion
  • Stir in:
  • ¼ C flour
  • Add: 3 C water
  • 2 T broth powder
  • When slightly thickened stir in:
  • 2 C cooked wild rice (3/4 C when raw)
  • ½ t salt
  • Heat 5 minutes
  • Add
  • 2 C plain soymilk (only soybeans and water on label)
  • 2 T sherry
  • ¼ C margarine
  • Heat.
  • Garnish with parsley
  • option:
  • Stir in 1/3 C finely grated carrots with rice
  • and/or Add 1 t liquid smoke and ¼ C bacos
