Minnesota Wild Rice Soup Recipe
Minnesota Wild Rice Soup
- Saute':
- 1/4 C vegan margarine
- 1 T minced onion
- Stir in:
- ¼ C flour
- Add: 3 C water
- 2 T broth powder
- When slightly thickened stir in:
- 2 C cooked wild rice (3/4 C when raw)
- ½ t salt
- Heat 5 minutes
- Add
- 2 C plain soymilk (only soybeans and water on label)
- 2 T sherry
- ¼ C margarine
- Heat.
- Garnish with parsley
- option:
- Stir in 1/3 C finely grated carrots with rice
- and/or Add 1 t liquid smoke and ¼ C bacos
