Vegan brown rice side dishes Recipes
Basic Brown Rice
- 1 C rice
- 2 c water
- ½ t salt
- Bring to a boil. cover. simmer 45-50 min
- Quicker method: Double the water and boil uncovered about 25 minutes. (check for doneness) Drain any extra water, or add water if it dries out before done
Brown Rice Pilaf
- Saute:
- 2 T oil or margarine
- ¼ c onion
- ½ t garlic
- Add:
- 2 C Brown rice stir 2 minutes
- add
- 2 2/3 c water
- 2 ¼ c vegi broth
- 1/2 t pepper
- 2 bay leaves
- 2 T parsley
- ½ t thyme
- ¾ t salt
- Bring to a boil, cover, and simmer 45-50 min.
Brown rice casserole
- Saute 3 min:
- ¼ # butter
- 1 onion
- 3 garlic
- 1 bell pepper
- Add and stir to toast 2 min
- 1 C brown rice
- mix in:
- 1 can mushrooms
- Put all in casserole w/
- 1 c broth
- ¾ c water
- Cover Bake 350 1 hour
