Homemade baked chickpea pancake bread like Socca

Chickpea pancake bread

  • Mix together
  • 1 1/3 C cold water
  • 1 1/4 C chickpea/garbonzo flour
  • 1 t salt
  • 1 t cumin (optional)
  • Pour 1/4 C olive oil in 12" cast iron skillet and top with batter
  • Bake 450 30-35 min until golden brown and crispy
  • Slice into wedges
  • serve with jam or syrup or gravy etc...
