Pams Perfect Potato Pancakes!

  • Place in Blender:
  • 4 C diced potatoes
  • 3 oz tofu
  • 1/4 C soymilk (only soybeans and water on label)
  • 1 T vegan margarine
  • 1 small onion
  • 2 T flour
  • 1 t salt
  • Blend just until all go through the blades, don't over liquify.
  • Heat a large flat skillet very hot. (Electric griddle works best)
  • Rub a couple Tablespoons margarine over the whole top.
  • spoon 2 T potato mixture and spread very thin.
  • Repeat on whole pan
  • When top of pancake is dry flip over and brown other side.

  • I like them topped with vegan margarine and sprinkled with sugar!
  • Dad likes them with Vegan Margarine and salt and pepper.
  • Mom likes them with maple syrup...

Baked Tofu Potato Latkes

  • Blend until smooth:
  • 1 cup firm tofu
  • 2 T oil
  • 2 T cup water
  • Add remaining ingredients and mix well.
  • 4 cups grated raw potatoes,
  • 3/4 cup grated onion
  • 2 cloves garlic
  • 2 T fresh parsley
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 cup blendered oats
  • 2 t onion powder
  • 1 T Nutritional yeast
  • Drop 1/2 cup portions on to oiled cookie sheet and flatten.
  • Bake at 400 F for 15 mins. Turn and bake until browned, about 10-15 mins more.
