Grandmas traditional Candied sweet potatoes

  • Melt
  • 2 T vegan margarine
  • ½ c water
  • ½ c br sugar
  • add:
  • 2 sweet potatoes, peeled and sliced bite size
  • sprinkle with salt
  • cover low heat
  • about 45 min
  • Add water if dry
  • uncover last 10- 15 min, increase heat to med. til glazed / caramelized
  • (or use canned/pre cooked and just caramelize to heat)

Toasted Pecan Sweet Potatoes

  • Once cooked as above, spread potatoes into greased 8x8
  • Sprinkle with
  • 1/2 C pecan pieces
  • mixed with 2 T brown sugar
  • Bake 425, 10 minutes to toast

Or simply melt brown sugar in a pan, add pecans and stir to coat and lightly toasted

Tips and ideas:


Mashed sweet potatoes

  • Place in med size saucepan:
  • 2 large sweet potatoes (peeled, sliced)
  • 1/4 C vegan butter/margarine
  • 1/4 C plain soymilk
  • 1/2 t salt
  • 1 T sugar
  • Cook, covered over low until tender, about 35-45 minutes
  • Remove from heat and mash well, or process/mill smooth

Tips and ideas:

  • Use coconut milk or orange juice in place of soy milk, for different flavor
