Grandmas traditional Candied sweet potatoes
- Melt
- 2 T vegan margarine
- ½ c water
- ½ c br sugar
- add:
- 2 sweet potatoes, peeled and sliced bite size
- sprinkle with salt
- cover low heat
- about 45 min
- Add water if dry
- uncover last 10- 15 min, increase heat to med. til glazed / caramelized
- (or use canned/pre cooked and just caramelize to heat)
Toasted Pecan Sweet Potatoes
- Once cooked as above, spread potatoes into greased 8x8
- Sprinkle with
- 1/2 C pecan pieces
- mixed with 2 T brown sugar
- Bake 425, 10 minutes to toast
Or simply melt brown sugar in a pan, add pecans and stir to coat and lightly toasted

Tips and ideas:
Mashed sweet potatoes
- Place in med size saucepan:
- 2 large sweet potatoes (peeled, sliced)
- 1/4 C vegan butter/margarine
- 1/4 C plain soymilk
- 1/2 t salt
- 1 T sugar
- Cook, covered over low until tender, about 35-45 minutes
- Remove from heat and mash well, or process/mill smooth
Tips and ideas:
- Use coconut milk or orange juice in place of soy milk, for different flavor
