Carrot Fritters

  • 1 ½ C chick pea flour
  • 1 ¼ C flour
  • 1 ½ C soy milk (with only soybeans and water on the label)
  • 2 T parsley
  • 2 T baking powder
  • 2 t salt
  • 2 t pepper
  • 1 ½ t thyme
  • 6 cups grated carrots
  • Mix all and refrigerate 3 hours.
  • Scoop heaping tablespoons into hot oil
  • Deep fry to golden.

  • Bake 375 10-12 minutes

Chickpea Fritters

  • 1 ½ C Chickpea (garbonzo) flour
  • 1 T finely chopped onion
  • 1 clove minced garlic
  • ½ t turmeric
  • ½ t cumin
  • ½ t salt
  • ¼ t pepper
  • 6 T cold water
  • Let sit 30 minutes
  • Deep fry or fry both sides golden brown
