Basic polenta

  • In large sauce pan
  • Boil 4 1/2 C water or plain soy milk (only soybeans and water on label)
  • 1/2 t salt
  • 2 T margarine optional
  • Slowly whisk in:
  • 2 1/4 C quick cooking polenta flour or 1 1/4 C course polenta
  • Lower heat to simmer and
  • 15-20 minutes until thick, stirring often.
  • Remove and serve as is, or pour into greased 13x9.
  • Cool.
  • Slice and
  • Fry in a little oil or use as is..
  • With maple syrup, or berry sauce for breakfast…
  • Vegan sausage and gravy…
  • Cover with spaghetti sauce, or mushroom sauce.
  • Or cover with sliced tomatoes, onions, garlic, black olives,
  • Fresh oregano, basil olive oil, salt and pepper.
  • Cover and bake 30 minutes.
  • Can mix other items into polenta such as
  • garlic
  • Onion
  • Cooked spinach
  • Nutritional yeast
  • Vegan cheese
  • Then spread in pan
