BulgurPilaf

  • Saute
  • 1/3 c vegan margarine
  • 1/3 c onion
  • 1/3 c bell pepper
  • 3 c bulgur
  • Add
  • 6 c vegetable broth or (6 Cups water plus 6+ teaspoons of broth powder)
  • Add
  • 9 oz can mushrooms
  • '
  • 1½ t salt
  • ¼ t pepper
  • Bring to a Boil.
  • Reduce heat to low and cover, simmer 15 min
  • Tips and ideas:

    • Add other spices like thyme, garlic, rosemary etc...depending on what you are serving it with.

    Quinoa risotto

    • 2 c boiling water
    • Add:
    • 1 C quinoa
    • 1/2 t salt
    • Simmer til dry 15 min
    • Saute
    • 1 T oil
    • 1 onion
    • cook 5 min
    • Add:
    • 1 cl garlic
    • Add:
    • 1# mixed mushroom
    • 1 t thyme
    • When mushrooms are cooked, add
    • 1 c white wine
    • When Almost dry add the quinoa and mix well

    Tips and ideas:


Basic Tabbouleh Salad

  • 2 C bulgur
  • Cover with warm water stand til soft
  • 15 min then drain
  • Mix with
  • 1 bunch chopped parsley
  • 1/2 c chopped fresh mint leaves
  • 4 green onions chopped
  • 3 tomatoes, chopped
  • 6 T lemon juice
  • 2 T olive oil
  • 3/4 t cumin
  • Salt to taste
