Mushroom toasts

  • Saute: 2 min
  • 1 T oil
  • 2 shallots
  • 2 garlic
  • Add: 5 min
  • 12 oz mushrooms
  • 1/4 c broth
  • 2 T parsley
  • 1 T thyme
  • 1/4 t salt
  • 1/4 t pepper
  • Heat Til dry
  • Cool. Puree or leave partially chunky

Caramelized onion toast toppers

  • Cook thinly sliced onion rings in a little oil until Caramelized, over low heat, at least an hour!
  • Add a little garlic, salt and pepper
  • Spread onto toast

  • Toasts with sundried tomato puree

    • Heat 2 cloves chopped garlic in a little oil until fragrant
    • Add to
    • 1 c sundried tomatoes in oil, with the oil.
    • 1/2 c black olives
    • 1/2 c fresh basil leaves
    • Puree smooth and spread onto toast

    Eggplant and sundried tomato spread

    • 2 1/2 # eggplant
    • Salt cubed eggplant in colander 30 min. squeeze dry
    • Heat 2 T oil add eggplant cook 6 min.
    • Blender with roasted garlic
    • 1 roasted garlic (400 45 min) Squeezed out
    • 1/4 c sundried tomatos in oil
    • 2 T tomato oil
    • 1/2 c fresh parsley
    • 1 T lemon juice
    • S & p
    • Taste
    • Serve with thin french bread sliced toasts

    Roasted red pepper mayo spread

    • Puree smooth:
    • 1/2 jar roasted red peppers
    • 3 T green onion
    • 3 T basil
    • 1 cl garlic
    • Spread for toasts
    • 3/4 c mayo
    • 3 cl garlic
    • 1 T lemon juice
    • 1 T balsamic vinegar
    • 1 t rosemary
    • 2 t dijon
    • s&p

    Fresh tomato bruschetta

    • Chop fine and mix. Chill overnight for best flavor. Or use right away
    • 4 tomatoes
    • 4 basil leaves
    • 1 T capers (optional)
    • 3 T ch onion
    • 3 cl garlic
    • 1/4 c olive oil
    • 1 T balsamic vinegar (optional)
    • salt and pepper to taste

    Roasted tomato toast toppers

    • Slice tomatoes in halves
    • Place cut side up in roasting pan
    • drizzle with olive oil
    • Sprinkle with
    • oregano
    • salt
    • chopped garlic
    • Bake 250 1 hour/turn after 30 min
    • Chop and top toasts


    Avocado Toast

    • Simply spread toast with smashed avocado, or leave in slices
    • Sprinkle with a little garlic salt or everything bagel topper
    • Or just use ready made guacamole

    Hummus Toast

    • Simply spread toast with ready made hummus
    • Make it fancier by topping with sundried tomatoes, or black olives or, pinenuts or roasted peppers or artichoke hearts, or?
    • Puree hummus with the sundried tomatoes or black olives, or roasted peppers, or?? for different colors and more flavor

    Home made Hummus

    • Puree smooth
    • 3 T tahini
    • 1 T sesame oil ( or canola oil)
    • 2 T lemon juice
    • 1/2 C water (more or less)
    • 1 large garlic clove, mashed
    • 1 15-oz can chick peas
    • salt & pepper, to taste

    Eggplant Caviar

    • Bake 2 eggplants 350 until tender.
    • Remove skin and mash flesh.
    • Add and chill:
    • ½ C minced onion
    • 3 cloves garlic
    • 1 T lemon juice
    • 2 T olive oil
    • ½ C fresh parsley
    • 1 t salt
    • ¼ t pepper
