Gingered Carrots

  • Put in saute' pan:
  • 1 # carrots cut in 2 ½ inch strips
  • 1 t gingerroot
  • 1 T b sugar
  • add water to cover carrots
  • cover pan cook 5-8 minutes
  • Uncover cook on high til dry
  • Turn off heat
  • Add:
  • 2 t sesame oil
  • 2 T soy sauce
  • ¼ t garlic powder

Caramelized Orange glazed Carrots

  • Boil 10 min:
  • 2 # carrots cut in sticks
  • 1 1/2 c water
  • 1 t salt
  • Drain
  • add rest:
  • 1 t orange rind
  • ¼ c vegan margarine
  • ¼ c b sugar
  • ½ t cardamom
  • Heat til caramelizes stirring gently to coat.



Maple nut carrots

  • Cook tender:
  • 5 c carrots cut in sticks or rounds
  • Drain add:
  • 1 T vegan margarine
  • 1 T maple syrup
  • ½ t salt
  • 2 T lemon juice
  • ½ c ch walnuts
