Favorite Cooked Carrots Side dishes
Gingered Carrots
- Put in saute' pan:
- 1 # carrots cut in 2 ½ inch strips
- 1 t gingerroot
- 1 T b sugar
- add water to cover carrots
- cover pan cook 5-8 minutes
- Uncover cook on high til dry
- Turn off heat
- Add:
- 2 t sesame oil
- 2 T soy sauce
- ¼ t garlic powder
Caramelized Orange glazed Carrots
- Boil 10 min:
- 2 # carrots cut in sticks
- 1 1/2 c water
- 1 t salt
- Drain
- add rest:
- 1 t orange rind
- ¼ c vegan margarine
- ¼ c b sugar
- ½ t cardamom
- Heat til caramelizes stirring gently to coat.
Maple nut carrots
- Cook tender:
- 5 c carrots cut in sticks or rounds
- Drain add:
- 1 T vegan margarine
- 1 T maple syrup
- ½ t salt
- 2 T lemon juice
- ½ c ch walnuts
