Italian Eggplant:
Cut Eggplant ½ " slices
Sprinkle with salt
Set aside 30 minutes -1 hour
Rinse. Dry lightly.
Dip in:
Italian dressing
¾ c dry bread crumbs
Bake 350 25-30
Top w/ tomato/vegan mozzarella
Sprinkle with basil and nutritional yeast
broil
 

TIP
Mix Italian dressing with a little vegan mayo for more flavor
