Perfect Basic French Bread / Italian Bread

  • Ingredients
  • 2 pkg Yeast
  • 1C water (110 degrees)
  • 1T salt
  • 3 C Water
  • Flour
  • Directions
  • Dissolve yeast in 1 C water.
  • Mix 3 C water with salt and proofed yeast.
  • Stir in a couple cups flour until smooth. Add more flour and knead about 10 minutes
  • Cover. Rise until doubled, about an hour. Punch rise another hour. Punch and form into 2 loaves or 4 for thinner baguettes.
  • Rise again then bake 450 for 10 minutes. Reduce temp to 425 and continue another 10-20 minutes, depending on size.

  • Spray loaves in oven during baking a couple times with water for crispier crust.

  • Garlic Rolls: Make French bread dough, and divide into roll size pieces. Place on baking sheet. Cut tops and pour ½ of mixture: 4 garlic, minced, with ½ C olive oil. Bake 15 minutes. Drizzle with other ½ . Bake until lightly browned.

  • Options: Add herbs such as basil, thyme, rosemary… complementary to what you are serving them with.

  • Add a little whole wheat flour for healthier bread.

  • Roll out onto flat surface and bake for use as pizza crusts. Freezes well.
