Homemade Rye Breads

Vegan Cholesterol free Recipes
Great Vegan Rye Bread 4 loaves
 
Proof 2 yeast in
½ C warm water 110 degrees
1 t sugar
 
Add 1 C water
1 ½ C soymilk (only soybeans and water on label)
½ C molasses
¼ C brown sugar
¼ C white sugar
1 T salt
6 T oil
3 C rye flour
5 C flour +-
 
Mix and knead 5-10 minutes
rise, punch rise (1 hour each)
Form into 4 loaves
Let Rise 1 hour
Bake 350 25-30 minutes

 

Pumpernickle rye
 
Carmalize, in heavy pan, med. High, stirring til dark and smokey, but don't burn:
1 C sugar
Remove. Add:
1 ½ c boiling water
¼ c Crisco.
Cool. Add:
proofed: 2 C water 3 yeast
¼ c cocoa
2 T salt
¼ c caraway seeds
Beat well. Add:
4 c white flour
4 c rye
More white = Stiff.
Knead. Cover rise. Punch.
Grease and sprinkle cornmeal in bread pan.
Rise 1 ½ hours
375 30 -35

 
Beer Rye
2 yeast
½ c water
Add:
12 oz dark beer
2 T brown sugar
¼ c melted butter
1 ½ T caraway seeds
¼ c molasses
2 t salt
1 c ww flour
1 c rye flour
Add 1 c more rye flour, and
enough white flour to knead.
Rise . Punch divide 2.
On greased cornmealed sheet
Rise
spray with oil. And course salt
Bake375 35-40 min.
 

Tips:
Remove from freezer as needed
Top with what you like and heat in oven
