oil
- 3 C rye
flour
- 5 C flour

- Mix and knead
5-10 minutes
- rise, punch rise
(1 hour each)
- Form into 4
loaves
- Let Rise 1
hour
- Bake 350 25-30
minutes

- Pumpernickle

- Carmalize, in
heavy pan, med. High, stirring til dark
and smokey, but don't burn:
- 1 C sugar
- Remove.
Add:
- 1 ½ c
boiling water
- ¼ c
Crisco.
- Cool.
Add:
- proofed: 2 C
water 3 yeast
- ¼ c
cocoa
- 2 T
salt
- ¼ c caraway
seeds
- Beat well.
Add:
- 4 c white
flour
- 4 c
rye
- More white =
Stiff.
- Knead. Cover
rise. Punch.
- Grease and
sprinkle cornmeal in bread pan.
Rise 1 ½ hours
- 375 30 -35
