Cajun Blackened tofu
- Drain and press tofu ahead of time
- Slice extra firm tofu into 1/2" (sandwich size) slices
- Coat with mixed:
- 1 T salt-free Cajun spice 2 T flour, 2 T cornstarch and 1 T brown sugar
- Fry in HOT cast iron, turning tofu to other sides when dark.
